The hard fat that can be melted or rendered for cooking. It comes from the back and is sometimes called back fat. The butcher returns it to us in thin pieces that are 6 to 8 inches long and gathered in a large bag that we break down according to the requested weight. It is best to render it after cutting or breaking each piece into smaller pieces and then straining the solids out for later use. Packaged in 3 pound packages.
